At Finca La Papaya in Saraguro, Loja, Abel Salinas manages a family-run coffee operation at 1,800 masl where labour availability is one of the main operational challenges during harvest. Much of the fieldwork and post-harvest handling is carried out with direct family involvement. Fruit trees — orange and mandarin — grow alongside coffee throughout the farm.
The Washed Sidra is the more established side of the farm's production — orange blossom, apricot, and pomegranate in a cup that reflects the gradual refinement of harvesting precision and post-harvest routines Abel has developed season by season at this Saraguro altitude.
